Dear Paul,  I'm delighted to let you know that the story I sent to Navy Supply Newsletter on the chef exchange program at Miss Maud's restaurant in Fremantle received a publisher's commendation recently from the editorial team in Canberra. Obviously I am very honoured but also pleased as it is great news for the Miss Maud group too.
Hope all is well. Kind regards, Joanne Williams, Senior Consultant; Oak Ridge Communication Group

Chefs Exchange Program (Standard Operating Procedure - suggested program)

The all-American Chef’s Exchange Program is on again in the Land Down Under. This world-renowned public relations initiative allows a military cook and restaurant chef to exchange culinary delights and kitchens for a day. In this instance, a Mess Specialist from the USS PELELIU, USS DUBUQUE and USS COMSTOCK are offered the unique opportunity to change places with a chef from prestigious hotel & restaurants. Following is a suggested program for the exchanges.

DAY 1 ... After berthing, a supply officer from each ship meets with representatives from the hotel and Catering Institute to discuss arrangements. For instance:
* Select appropriate days/times for both exchanges.
* Organise transport arrangements for both chefs. * Inform media sources.
* Arrange a time for publicity photographs. If this meeting is held on-board the ship with both chefs present in their uniforms, this is the deal photographic opportunity in the galley without having to interfere on the day.

DAY 2 ... Exchange one: The hotel chef will step aboard the ship and cook up a storm. The confined spaces of the galley and restricted on-board food supplies are sure to provide a challenge.

DAY 3 ... Exchange two: The Navy cook will visit the prestigious hotel’s kitchen. Photographs and/or an interview with both chefs could be organised for later in the day.

G'dya Paul, I have just returned from 2 weeks in sunny Thailand and have been reading through the email exchanges regarding the Chef Exchange. Sounds like it was a howling success! I am glad to have helped in a small way. You have done a wonderful job in fostering relations within the International Military/Naval and Catering Communities - good on ya mate! www.gunplot.net

Paul, I personally interviewed my cooks upon their return from working at the various restraunts in Fremantle & Perth. To my surprise they all enjoyed. One of my cooks actually, ask me to leave him in Australia. I thought it was a total success. Good to share knowledge with the outside world in the food service business. Good Luck! CWO2 Quarles

Good morning Paul, The word on the streets has been great concerning the chef exchange in Australia, the boats that participate share the info with others when they get home and it is great the stories they have to share.   Thanks for all your efforts, Joe. MSCS(SS)
